Beer styles are funny creatures. They are ambitious enough to try encapsulate in one or two world what you should expect from any given beer, for example the term ‘Gose’ conjures up an image of dry, moderately tart and salty beer. This is made readily apparent when you get a beer that does not meet your expectation, this has happened to me on more than one occasion with beers claiming to be ‘West Coast IPA’, my image of a dry, hop forward, bitter beer with a clean malt bill clashes with the caramel malty bitter-sweet beer in my glass. Regardless of how well made, interesting or down right tasty the beer is, I cannot help but find it disappointing. The overwhelming positive of this is that it enables you to walk up to the fridge and have an idea which beers might suit you. The down side is what do you do with a beer that does not really fit into a style? Typically, you make one up by adding extra descriptors – such as the New England IPA which although it in no way resembles a traditional IPA in appearance or flavour this name does communicate that it is a well hopped beer. So, in the end so long as a the name informs you what it is you are about to buy no harm done. Aroma is moderate malty, toasted, moderate to heavy hoppy, pine, grapefruit, wood, light citrus. Flavor is moderate sweet and light heavy bitter with a long duration, toasted, minerals, pine, wood, grapefruit, dry. Body is medium, texture is oily carbonation is soft. A clever cherry beer? Full of cherries for sure, thanks to our friends at Red Hill Cherry Farm. And wit? well that is a white ale of course. This is just a simple little beer, bright cherry coloured, moderately Morello flavoured from lots of real cherries. It’s the perfect wit for spring, or summer, or autumn for when you want to cherish those good times. A Saison is the pinnacle of summer thirst quenching, easy drinking beers. They are simple, dry, fresh and just a little bit interesting in a way that only Saisons can be. Subtle aromas of citrus, coriander and other light spices are there, even though those ingredients were not used. Just think of long, lazy summer holidays in the country or by the beach. Let’s enjoy a good ol’ fashioned summer of love, beaches, beers, BBQs, sunshine and fun! Heidi & the Sausage is a simple little Blond summer ale, with added Honey Chai spices. We didn‘t use any sausages in the brew! This beer is so easy and so delicious. Red Duck Hop Shark is a full on, super hoppy ale, with moderate hop aromas, and a moderate bitter finish. It’s a hoppy beer that is totally sessionable. We use Centennial & Cascade hops for bittering, starting with fresh wort hopping and progressing to a long, after-boil steep with more Centennial & Cascade, and finish off our Hop Shark with hot wort infusing over whole Galaxy hop cones. All-natural hopping means that aromas are not intense, but that the flavours and “hoppiness” are balanced and enjoyable.
